Breaking the Mold

Okayama Kobo was born in 1986, when Tsunetaka Kawakami opened his first bakery after years of working long hours apprenticing under a genius master baker in Osaka, Japan. Mr. Kawakami’s journey in baking led him to realize that it was possible to make bread that tasted good using dough with no additives, softeners, or preservatives. Okayama Kobo broke tradition by being one of the first Japanese bakeries to hire female bakers, one of whom later inspired Mr. Kawakami to take the courageous first step of challenging an age-old norm of the baking industry–baking with no softeners, additives, or preservatives. In the face of numerous failures and customer complaints, Mr. Kawakami labored and perfected a method of bread-making that required the use of only natural ingredients and still produced delicious bread–a method we follow meticulously today at Bread Bar, Guam, where we fearlessly continue his legacy of breaking the mold. 

Our Vision

Guam’s only bakery to use dough with no additives, softeners, or preservatives, where authentic Japanese bread is shaped by hand and baked fresh daily, offering a modern artisanal experience. We want to create the intersection of Japanese style bread with our local culture, and raise the bar for good food in Guam.

Bread Bar Guam dedicates itself to meticulously following the baking method of Okayama Kobo, where bread is hand-made daily using only fresh, high-quality, and natural ingredients. We bake from scratch every morning from whole dough with zero synthetic additives. We fearlessly pioneer 100% natural, preservative-free and additive-free bread in Guam.
